Made good headway!

August 26 – Nothing much on today’s agenda!  Just to where to really go.  Today Bill sat out for quite a while after he mowed an overgrown site for something to do.

I spent most of the day finalizing our travel plans home.  I’m happy to say it’s done and I
Bill and his baby!
have arrangements to see 2 of my childhood friends when we get to Virginia.  We made our last reservations in north Florida where we will meet up with friends, Bruce and Sharon, for our last 2 nights on the road.  We get home on October 2, a few days sooner than we had allowed.  It gives me some time to get settled before doctor appointments and my Christmas shopping started.

Bill had a 5:30 appointment for his acupuncture so while he was gone I made a batch of peanut brittle from a bag mix made by Betty Crocker.  There is nothing easier than that!  You grease a cookie sheet or pan, pour the bag of mix on it and pat into an 8 inch square and bake it.  When I took it out I did use a spatula to pull the outer parts that ran a little in to the 8 inch square, then let it cool.  It doesn’t make a huge amount but it sure is full of peanuts and is very good.

Then I put my meatloaf in the oven and made a one apple Waldorf Salad to go with the meatloaf and some steamed zucchini.

I had just finished my dinner when Bill got home so I sat with him while he ate.  He enjoyed his meatloaf and had some peanut brittle for dessert with his rice pudding.  I’ll have to see if Ollie’s still has it my next trip into Manchester!
